Jerusaleum
artichokes are in the Composite family,
Compositae. We make our flour from
organic Jerusalem artichoke tubers;
they are small, irregularly shaped
tubers with a thin, light brown skin,
and crisp white flesh inside. There
are about 1420 calories in one pound
of artichoke flour. The composition
of the flour is approximately: 72%
carbohydrate, 5% protein, 0.5% fat,
7% fiber, 10% water, and 5.3% minerals.
Artichoke
flour has a pleasant, slightly sweet
flavor. The artichoke tortillas, milk,
and cookies, all taste really nice.
