Special Foods!TM offers a large variety of flours to meet your every need! Our most popular flours are our special line of wonderfully exotic and unusual flours. They are superb for rotation diets; even the most allergic person can generally find something that is well tolerated among these flours. Recipes are available upon request for each of the unusual flours. Each flour is 100% pure, containing only the flour listed.
WHITE SWEET POTATO flour is creamy-white in color. White sweet potato flour produces baked products with great taste and texture. The taste is faintly sweet in a gravy or thickener. Milk made with sweet potato flour is our favorite. Available in one pound size only: $18.70/pound.

WATER CHESTNUT flour is a bright white starch. The flour has a nice taste. It may be used in any way a starch is used, e.g., coating meats and vegetables, thickener for soups, stews, gravies and sauces. We also have available recipes for flat bread. Available in one pound size only: $11.65/pound.

MALANGA flour is light tannish-white in color. The taste of malanga flour changes markedly depending upon how the flour is used. The taste is bland and potato-like in gravies or in any process involving moist heat, such as dumplings. The taste is potato-like in any fried product. The taste is moderately strong (although some people really like this taste) in baked products that are still slightly moist after baking, but the taste is not strong when a product is baked to dryness, such as in a cracker. Available in one pound size only: $23.00/pound.

ARROWROOT flour is a light off-white flour that is very high in fiber. The flour has a nice taste. It may be used in many ways and makes nice baked products. This flour is one of our top three in terms of taste. Available in one pound size only: $32.35/pound.

YAM flour is made from the true yam, family Dioscoreaceae; the flour is a light off-white color. Yam flour is a cooked flour, and makes good cookies, pie crusts and so forth. Available in one pound size: $27.00/ pound.

LOTUS flour is a creamy-light color. The taste is not bland although also not unpleasant for most people. Lotus tastes somewhat like cheddar cheese with a twist of lemon. Lotus products that also contain oil (such as cookies or fried products) are best liked by many. Also adding a little salt to a recipe seems to neutralize the taste and make it much more bland. When baking, better results are obtained with small sizes, for example make several small loaves of bread rather than one large loaf. Available in one pound size only: $28.25/pound.

CASSAVA flour is white in color. Cassava flour produces baked products with a very nice taste and texture, particularly bread, muffins, cookies, and pizza dough. The flour taste is bland in a gravy or thickener. Available in one pound size only: $20.85/pound.

ARTICHOKE flour is faintly sweet. Artichoke flour, because of the nature of the artichoke tuber, does not thicken like the other flours do. It can be sprinkled over the top of other foods, and recipes are available for cookies, tortillas, pie crust, mayonnaise, milk and ice cream. Available in one pound size only: $34.30/pound.

QUINOA flour has a creamy, light color and is best stored in a very dry, airtight area. It makes nice tasting baked products. Available in one pound size only: $9.15/pound.

AMARANTH flour is a creamy-light color. Our flour is very very fine flour. It makes nice tasting baked products. Amaranth tends to form a nice crust on the outside before the dough is cooked on the inside, so use the smallest amount of water you can, and allow for a little longer baking times than you might otherwise. Available in one pound size only: $7.90/pound

MILO flour is a rusty hued color with flecks of cream and dark. The taste is faintly sweet in most products, and in taste is the most like wheat of all our flours. This is probably due to the fact that milo is a grain, that is, a member of the grass family. It makes all products very nice tasting, the only drawback to this flour is that baked products tend to crumble easily; thus they must be handled very gently. Available in one pound size only: $9.80/pound.  

Special Foods BUCKWHEAT flour is fresh ground from raw, organic buckwheat groats. The flour is light in color and makes nice tasting baked products that are a pleasant, bland taste. Available in one pound size only: $7.95/pound
