Special Foods!TM
products are for persons with food allergies and/or intolerances,
chemical sensitivities, mold allergies, for persons on rotation
diets, for persons interested in incorporating Special Foods!TM
into their diets for a variety of nutritional and health reasons,
and for the adventuresome gourmet. When a person's diet is restricted,
finding foods can be a real problem. One of the hardest things
to deal with is the virtual elimination of breads, cookies,
and pastas from the diet.
We at Special Foods
know how difficult these problems can be. Ms. Karen Slimak,
the founder of Special Foods!TM is a scientist and consultant
who specializes in food allergies1. The products offered by
Special Foods!TM were originally developed to meet the needs
of both food allergy patients and family members.

MS, environmental scientist and chemist, provides consulting
services to persons with food allergies/intolerances and chemical
sensitivities. She is also a scientist, researcher and prolific
inventor, holding patents in the US and internationally covering
hundreds of products and processes in diverse fields including
medicine, foods, cosmetics, and industrial processes.

| The Slimak children were
diagnosed with extensive, severe food allergies at 5 years, 3 years,
and 5 months of age. In the early months, the children ate a boring
diet of boiled, steamed root vegetables and exotic game meats. The
children began to lose interest in eating and rapidly lost weight.
Thus began a frantic attempt to find ways to prepare more familiar
forms of the foods, such as flours and breads. The results of the
research became available in "the nick of time". |

First,
flours were invented and used to make gravies and milk substitutes.
Next she developed baking powders and pancakes, quick breads,
loaf breads, cakes, and cookies -- ALL without any grains, milk,
eggs, yeast and sugar. (They said it couldn't be done!) Then came
pastas, pie crust, imitation nut butters, muffins, waffles, pan
cakes, French toast, bagels, doughnuts, dumplings, tortillas,
cereals, imitation milk, ice cream, and milk shakes, chips, puddings,
jams, fruit drinks, sodas (!) and more!

| The
most wonderful thing was that the foods really tasted good! The
pancakes were as good as or better than the best pancakes -- light
golden in color, and light in consistency. AND-- they were high
in fiber, low in saturated fats, high in complex carbohydrates,
and because they also contained protein, were well balanced, highly
nutritious, delicious, satisfying foods! The cookies were wonderful!
Again not only tasting good, but also well balanced, highly nutritious
foods. |

The
children could eat them as part of a meal or as in-between meal
snacks, and their appetite was not affected because they were
wholesome foods, not empty calories. The pastas! A delight! They
turned out bland, light in color. They held together well and
did not turn gummy or clear, like cellophane noodles. They looked
and tasted like the real thing. They have been cooked in many
different ways with excellent results. Kids love peanut butter
and jelly sandwiches, but how can you have them if you are allergic
to every nut? We thought that one over for a long time and finally
figured out a way. |

results were not only delicious, but the new "nut butter"
even looked, tasted and felt like real peanut butter! The light
in the children's eye's and the smiles on their faces as they
ate their first "peanut butter and jelly sandwich",
when they had the pasta for the first time, and when they devoured
the cookies, was enough of a reward. But there was more! They
quit asking for the other foods! They didn't miss them any more
because they had new foods that were just as good! It was then
that we realized how much we had to share! For the many others
-- children and adults with similar problems, we decided to share
our discoveries, and make these and other foods available to them.

And so -- Special
Foods!TM came to be! With the new flours, pastas, and so forth,
the possibilities are almost endless. With this new variety,
people on restricted diets don't have to live "lives of
denial". It is possible to have pleasant variety and tastes
and textures that are as appealing as anybody could want!
In the years that followed our
beginning we have continued to develop foods and other products
for persons with food allergies and chemical sensitivities.
The Slimak children have been simultaneously guinea pigs, harshest
critics and quality control! Special Foods!TM is profoundly
indebted to the Slimak children; they have been the first to
sample virtually every product we offer.

And the children NOW??? After years
on a completely controlled diet -- avoiding all problem foods,
while still receiving high calorie, nutritionally balanced foods
-- the children have recovered; their diets are now completely
unrestricted!
Special Foods!TM now offers several
hundred totally unique, new foods. We have developed hundreds
of recipes, and all of them are without wheat or other grains,
eggs, milk, yeast, legumes, or sugar. We also offer a number
of other hard to find items: Neolife® cleaning products,
cellophane, and hypoallergenic lip balms.
