As you know unusual foods are expensive for you and for us. Our costs for the tubers alone are often $1.00 per pound and above, and it takes about 5 pounds of tubers to make one pound of flour. In addition the process is time consuming because the tubers and fruits have to be processed by hand; their unusual sizes and shapes do not conform to machine requirements. The jams are expensive because the fruit is priced very high, and there is much loss from peelings, seed removal, and concentrating the pulp during cooking. Finally, the extra procedures necessary to avoid chemical and biological contamination increase prices further. Because of the costs for materials and processing, we keep all other costs at their absolute minimum, in an effort to keep costs as low as possible.
