Water chestnut

Water chestnut flour is a starchy flour which does not contain much fiber. Its best uses are similar to those for corn-starch, e.g., as a thickener and breading material. One customer reports making dough balls and dropping them into boiling broth, and reports that the results are delicious!  Water chestnut flour makes one of our most popular crackers, pictured below.
Water chestnut crackers are very light, crisp and crunchy. They also melt in your mouth as you eat them.  Water chestnut belongs to the family, Onagraceae. There are about 1700 calories in one pound of water chestnut flour. The composition of the flour is approximately: 85.2% carbohydrate, 6.7% protein, 1% fat, 2% fiber, 5% water, and 0.1% minerals.
