Yam

True yams are in the Yam family, Dioscoreaceae. True yams are not related to the sweet potato "yam" at all. (The yams you see in the grocery store are not true yams, but are sweet potatoes, family Convolvulaceae). True yams, also called Z ame, yampi, cush-cush, and mapuey, are very large tubers; the smallest generally weigh about two pounds and the largest may weigh over one hundred pounds. The outside skin may be
reddish-brown, brown, gray, or black. The tubers are often a foot or more in length; they may be five or six inches in diameter, and they tend to be even thicker at the ends. The inside flesh is white.  There are about 1490 calories in one pound of true yam flour. The composition of yam flour is approximately: 73.1% carbohydrate, 6.8% protein, 1.1% fat, 14.1% fiber, 1.8% water, and 3.1% minerals.
Yams taste like potatoes when boiled, and taste very bitter when fried; so we steam yam tubers before drying them, and we grind the flour in a low temperature process to keep the flour from tasting bitter.

Since making these changes the yam flour tastes really good, and the foods made from the flour are good. Try our new breads, muffins and flat breads.
